  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ripe avocado, diced
  • 1 ripe mango, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat the oven to 200°C (400°F).
  2. Place the cubed butternut squash on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  3. Roast the butternut squash in the preheated oven for 25-30 minutes, or until tender and caramelized, flipping halfway through.
  4. In a mixing bowl, combine the diced avocado, diced mango, chopped red onion, chopped jalapeño, lime juice, and chopped cilantro. Season with salt and pepper to taste. Mix well to combine.
  5. Once the butternut squash is roasted, remove it from the oven and let it cool slightly.
