Ingredients
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 can (15 oz) black beans, drained and rinsed
- 1 ripe avocado, diced
- 1 ripe mango, peeled and diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt and pepper, to taste
- 2 tablespoons olive oil
Directions
- Preheat the oven to 200°C (400°F).
- Place the cubed butternut squash on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
- Roast the butternut squash in the preheated oven for 25-30 minutes, or until tender and caramelized, flipping halfway through.
- In a mixing bowl, combine the diced avocado, diced mango, chopped red onion, chopped jalapeño, lime juice, and chopped cilantro. Season with salt and pepper to taste. Mix well to combine.
- Once the butternut squash is roasted, remove it from the oven and let it cool slightly.
